Make delicious Southern Egg Salad for parties and gatherings. It’s always a favorite. Egg salad is one of my personal favorites. I just love the stuff and I know that I’m not alone.

A delicious batch of egg salad makes a wonderful lunch or serve it along with those delicious bakery croissants and you’ve got yourself a winning party food.

If you’re in a pinch for time, you can even buy boiled eggs at the grocery stores these days so you can take out the step of having to cook them.

Egg salad is also a great make ahead recipe because it is usually served chilled.

Ingredients

  • 12 Hard Boiled Eggs
  • 1/2 c Mayonnaise
  • 1 tbsp. Dijon Mustard
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/2 tsp Dried Dill
  • 1 tbsp. Chopped Chives
  • 12 Mini Croissant Rolls or 12 Slices White Sandwich Bread

Egg Sandwich Ideas

Old Fashioned Egg Salad

 
Dice boiled eggs and add to a mixing bowl.
 
Add mayonnaise, Dijon mustard, and seasonings to the diced eggs and stir to combine.
 
Makes a dozen mini croissant sandwiches.
 
If using bread slices, king sliced is preferable. Add egg salad to half of the bread slices and topping with another slice and remove crust. Cut each sandwich into 4 mini triangle tea sandwiches. Will make 24 mini sandwiches using this method.

Classic Southern egg salad for parties and luncheons
