Beefy Noodle Soup

Beefy Noodle Soup is a homemade classic comfort food. Simple ingredients with the addition of herbs and seasonings make a flavorful meal. Leftovers are great too!

If you happen to be planning ahead and making freezer meals to use later, follow the recipe without adding the noodles. You can freeze the soup base and add the noodles when you plan to eat the soup later. Noodles don't hold up well once cooked and frozen.

Blackberry Grits

Blackberry Grits! Before you go thinking this Southern girl has gone crazy, just hear me out. I am always happy to find places I enjoy for the occasional breakfast or brunch out. This dish was inspired from such an outing to a great place called Another Broken Egg Cafe. The restaurant seems to be quite popular and has locations all over the US.

My first visit here, I was reading over the menu and came across Blackberry Grits. My first thought was "Why would anyone do that to grits?" but I was intrigued. Don't get me wrong, I'm never giving up my traditional grits with salt, pepper and butter. I call those my everyday grits. Blackberry grits however are something I now enjoy on occasion. My intrigue for this dish grew stronger as a server at the restaurant went walking by, with you guessed it, blackberry grits. They looked wonderful! I like blackberries and I like grits. So, why not together? My mind was settled, I was going to order it and give it a try!

Stewed Beef Tips and Rice

Stewed Beef Tips, served over rice or buttered noodles, is a time tested favorite recipe. The method of stewing meats has been around since people started cooking. It remains popular today because it is easy and delicious. Back in ancient times it was probably much easier to prepare meats this way since they were cooking in a pot over open fire. The old saying "if it ain't broke, don't fix it" pops into mind.

Lemon Poppyseed Bread with Lemon Glaze

Poppy seeds, the slate blue goodies used in baking pastries and breads that we've come to love. They add a slight crunch to each bite of your baked goods. Poppy seeds are used in other areas of cooking, such as making dressings. My favorite by far is the combination with lemon, in a Lemon Poppyseed Bread with a lemon glaze. It's so easy to prepare and bake. This scratch made bread is great served at breakfast, for snacks or a dessert.

The batter in this recipe takes just a couple of minutes to prepare and can also be used to make muffins if preferred. After baking and the glaze is mixed, then drizzled over the bread loaves, the cook gets first slice and gets to dab each bite into the leftover glaze. AHHH, the perks of being the cook in the family!

Baked Ham and Egg Cups

Baked Ham and Egg Cups are an easy to prepare breakfast. Add some cheese if you please 😉
Breakfast cups bake in the oven, so they're perfect for back to school mornings or when you have guests to feed. You can make one, or up to a dozen at a time, with minimal ingredients.

We all have those mornings where it's busy and just don't have time to stand over a stove, right? You still want to have a healthy breakfast. The oven does all of the work for you. With a muffin pan to add your ingredients to, you're good to go!
