BBQ Chicken Meatloaf Recipe

In this post I’ll be sharing a BBQ Chicken Meatloaf Recipe.

A simple meatloaf made with ground chicken and topped with barbecue sauce is a delicious variation to your standard meatloaf.

A comfort food for many, this BBQ Chicken Meatloaf will not disappoint. If you’re a fan of the meatloaf sandwich, you’ll love this recipe!

Old Fashioned BBQ Sauce Recipe:

  • 1/2 c Molasses 
  • 1 c Ketchup
  • 1/4 c Yellow Mustard
  • 1/4 c White Vinegar
  • 2 tbs Worcestershire Sauce
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/4 tsp Cayenne Pepper
  • 1/2 tsp Hot Sauce, such as Texas Pete
Combine all sauce ingredients in a small mixing bowl. Add the sauce to a bottle or airtight container. May be refrigerated up to one month. This sauce is great on any dish you would use barbecue.

Ground Chicken Meatloaf

 
Chicken Meatloaf Recipe:
  • 1 Bell Pepper, diced
  • 1 Medium Onion, diced
  • 2 lb Ground Chicken ?
  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Garlic Powder
  • 1 c Old Fashioned BBQ Sauce, divided
  • 1 c Plain Bread Crumbs
  • 2 Eggs

Easy Barbecue Meatloaf with Ground Chicken

Preheat oven to 375℉
 
Prepare a sheet pan by covering with aluminum foil. Lightly spray the foil with cooking spray. Since the chicken is a leaner meat, it tends to stick if the surface isn’t lightly coated.
 
In a mixing bowl – combine the bell pepper, onion, ground chicken, seasonings, bread crumbs, eggs and 1/2 cup of the barbecue sauce.
 
I find the best way to mix everything for a meatloaf is to get my hands dirty and dig in! Smoosh and mash until everything is thoroughly mixed together. I know it’s icky but somebody’s got to do it.
 
Remove meat mixture from the mixing bowl and form into a loaf on the sheet pan.
 
Place into the oven and bake for 1 hour.
 
After 1 hour, remove the meatloaf and brush the top of the meatloaf with the remaining 1/2 cup of barbecue sauce.
 
Return to the oven and bake an additional 10 minutes.
 
Remove from the oven and allow to rest 10 minutes before slicing.
