Blueberry Pie


Delicious Blueberry Pie! You can't beat it. In general, a fruit pie is pretty easy to make, even if you don't consider yourself a baker. The sweet and slight tart of the berries are divine in this classic dessert.

Ingredients


  • 1 pkg Refrigerated Pie Crust (2 sheets)
  • 2-3 tbs All Purpose Flour
  • 5 c Blueberries
  • 1 tbs Lemon Juice
  • 1/3 c Cornstarch
  • 3/4 c Granulated Sugar
  • 2 tbs Butter (chilled)
  • 1 Egg Yolk
  • 1 tbs Heavy Cream

Preheat oven to 375℉

Refrigerated Pie Crust

Sprinkle a couple tablespoons of flour onto a cutting board or counter top.

Roll out one sheet of the pie crust onto the floured surface. gently roll out with a rolling pin until smooth.


Fold the pie sheet in half and place into the bottom of the pie dish. Unfold and mold into the bottom and sides of the pie dish.

Rinse blueberries and add to a mixing bowl.

Sprinkle berries with lemon juice, cornstarch and sugar. Toss gently to coat the berries.


Add the berry mixture to the pie dish.

Slice chilled butter into pieces and place on top of the berries.


Unroll the second sheet of pie crust to the floured surface and roll gently to smooth.

You have options for the top crust of your pie. You can fold over and add to the top of the pie, then unfold to cover the pie. Form the edges and cut slits into the top for venting. I have chosen to do a lattice top. It's really easy to do and I think makes a pretty presentation.


Using a pastry wheel, cut the rounded edges off of the pie crust sheet, then cut into strips as evenly as possible. Remember this.....it does not have to be perfect! I just use my judgement to try to get them fairly even. I'm not pulling out rulers or anything to measure.

Add the strips in one direction on top of the pie spaced apart. Weave in strips going the opposite direction over and under each strip for form a lattice pattern. Again, it doesn't have to be perfect. My pies are never perfect. I'm not a professional baker. They are homemade, they look homemade and taste delicious. So don't beat yourself up over the little things 😉


In a small bowl, add the egg yolk and tablespoon of heavy cream and whisk together. Use a pastry brush to brush on the top of the crust. This egg wash gives a beautiful browning and shine to the pie.

Place pie into the oven and bake 45-55 minutes until hot and bubbly. The crust should be nicely browned.

Cooling the pie

Allow the pie to cool completely before serving. 

The pie itself is delicious or serve topped with whipped cream and a scoop of vanilla ice cream.
