Southern Skillet Fried Okra


OKRY!! Many people do call okra....okry. Regardless of what you call it, okra is a southern favorite. It's an essential ingredient in gumbo and soups. My personal favorites are pickled okra and Fried Okra.

Okra is the edible seed pod from the okra plant. I once asked a question on the Julia's Simply Southern Facebook Page - "What is one food you do not like?" - and was surprised that a lot of people do not like okra. It's one of those, you either love it or hate it kind of things. So this recipe is for all the okra lovers out there!!

Lemon Pepper - Flat Roasted Chicken


This is a very easy method for roasting a delicious and moist chicken. To cut the backbone out of the chicken enables you to flatten the chicken for cooking is referred to as spatchcock. Roasting a chicken flattened out also saves a few minutes of cooking time, so you can have roast chicken any day of the week! I find it handy to keep a few recipes on hand for roasting chicken so you have a few different flavor variations to enjoy. Lemon pepper is always a favorite. Choosing simple sides that can be added to the skillet during cooking will also allow you to create a true one skillet meal.

Chicken and Asparagus Spaghetti Bake is wonderful for family meals. Chicken, asparagus, pasta and a creamy rich Alfredo sauce......sounds heavenly to me. Alfredo is one of my personal favorites. It is one of those sauces that is so versatile and can be used with any pasta, with or without a variety of meats and veggie combinations, and is liked by most people. Plus it has cheese in it and I'm always in for anything cheesy!!

Asparagus is highly nutritious. In fact, it is considered to be one of the most nutritionally balanced plant-derived foods. Asparagus has even been used for medicinal purposes. We can thank the pilgrims for bringing this vegetable to America.

Nanny's Old Fashioned Blackberries and Biscuits


Y'all I have something special to share with you. This old fashioned blackberries and biscuits is a dish my grandmother (Nanny) would make for breakfast during blackberry season. Back in those days, you couldn't find berries in the store year round like you do now. Honestly, I don't even know if berries were sold in stores back then. You had to go out and pick them yourself. That's why this was a special treat because it only came around once a year. When the blackberries ripened we would be out picking. Oh how I remember those briar bushes scratching my hands and arms.

Making fresh squeezed lemonade is easy and takes only minutes. I always love seeing child entrepreneurs with their pop up stands selling lemonade in summer. Life's lessons can come from something so simple as selling a glass of cold lemonade to thirsty patrons.

Y'all know I love to share easy to follow recipes with you. Sometimes I realize that I've missed sharing something basic, that everyone loves......like comforting mashed potatoes. Mashed potatoes are always a favorite for most people. I'm going to share how I make the perfect creamy mashed potatoes every time. I'm not kidding when people are always asking how I make them because they are so good....and there's a little secret ingredient in there. A friend of mine, Kandy, of nearly 20 years now shared this trick and I've been doing it ever since. Remember, it's a secret, shhhhhh....don't' tell.

Country Style Steak


We are rolling through the month of April Y'all and the weather is beautiful! I've got the windows open and those wonderful spring breezes are flowing through. Life is so good.

Today, it's Country Style Steak for dinner. Country Style Steak is like Country Fried Steak & Gravy cooked in a similar method as you would Smothered Pork Chops. So basically, it's country fried steak and gravy that you cook in the oven on a lower temperature for a couple hours. What you get is.....yummy, delicious, incredible melt in your mouth goodness! The beef just falls apart - in a good tender way. Great served over rice. This is classic southern cooking the whole family will love!

Scalloped Tomatoes


Scalloped Tomatoes are a classic southern dish. I remember my grandmother making this when I was a child. It is known by other names that include stewed tomatoes, breaded tomatoes and tomato pudding with recipes that vary a little between each version. Basically they're pretty much the same concept of a tomato and bread casserole dish. The recipe is known to date back as far as the 1820's.

I am not an expert on the matter of how this dish came to be, but I would assume it came out of making the most of what you had and not being wasteful with food by using up old bread and a making use of a bountiful tomato harvest. My grandmother had no set recipe and would use old bread or biscuits that were on hand to make her recipe.

Chicken & Dressing Casserole


Chicken and Dressing Casserole is a wonderful meal. It takes a little bit of time to put together but is well worth the effort. You can save a little time by preparing the cornbread the day before. This recipe will easily feed 6-8 people, depending on appetite. Leftovers are great too! I serve the casserole as the entire meal but you can add a couple of side dishes if desired.

  • 3 lbs Boneless Skinless Chicken Breast
  • 1 Cake of Cornbread (recipe follows)
  • 1/2 Stick Butter
  • 1 Onion, diced

Iron Skillet Strawberry Cornbread


Something AMAZING happens when you take Bona Fide Southern Cornbread , add some strawberries and a touch of sweetness! I had a slice of this Iron Skillet Strawberry Cornbread with a drizzle of honey on top and it was so good y'all. You could dress it up with whipped cream, a drizzle of strawberry syrup, or serve with a scoop of vanilla ice cream - all would be great! You may have even had regular cornbread with milk or buttermilk at one time or another and I bet this would be good like that too.

I have to share a funny story with y'all. My first attempt at making this recipe didn't go so well. Lawd

Oven Baked BBQ Beef Ribs


Succulent beef ribs, cooked low and slow, sauced in barbecue are delicious. A side of potato salad, corn on the cob and you've got yourself a tasty meal for sure!

Beef ribs are much more flavorful in my opinion. It is important to cook them properly to ensure the fat and connective tissues "melt" so the meat is tender and flavorful. This can be achieved easily. Everyone has their favorite way to make barbecued meats but sometimes simple is best.
