Lemon Poppyseed Bread with Lemon Glaze

Poppy seeds, the slate blue goodies used in baking pastries and breads that we've come to love. They add a slight crunch to each bite of your baked goods. Poppy seeds are used in other areas of cooking, such as making dressings. My favorite by far is the combination with lemon, in a Lemon Poppyseed Bread with a lemon glaze. It's so easy to prepare and bake. This scratch made bread is great served at breakfast, for snacks or a dessert.

The batter in this recipe takes just a couple of minutes to prepare and can also be used to make muffins if preferred. After baking and the glaze is mixed, then drizzled over the bread loaves, the cook gets first slice and gets to dab each bite into the leftover glaze. AHHH, the perks of being the cook in the family!

Breakfast cups bake in the oven, so they're perfect for back to school mornings or when you have guests to feed. You can make one, or up to a dozen at a time, with minimal ingredients.

We all have those mornings where it's busy and just don't have time to stand over a stove, right? You still want to have a healthy breakfast. The oven does all of the work for you. With a muffin pan to add your ingredients to, you're good to go!

Cucumber Salad

We are in the midst of the growing season in the South so the cucumbers are plentiful. What do you do with all those cucumbers? Top salads, make pickles, slice them and sprinkle with a touch of salt for snacks. Yes to all of those, and of course, make the classic old fashioned Cucumber Salad. It's likely you remember your grandmother making this cool summer side dish. When it's hot, cool refreshing side dishes are always welcome.

Smothered Chicken

Smothered Chicken, a delicious homemade meal of fall off the bone tender chicken in gravy. We love our fried foods in the South and we love gravy too. Marrying these two into a dish is surely something special. Just imagine how a piece or two of this smothered chicken served on a bed of creamy mashed potatoes or fluffy rice will be......AMAZING! Best of all, it's a simple recipe and most of the work is done in the oven.

Natural Bridge - Keowee Toxaway State Park

The air was thick and humid after the morning rain as we began our hike on the trail. The Natural Bridge Trail in Keowee Toxaway State Park. A trail described as moderately strenuous. Starting out, so far so good. I did notice however we were walking downhill. That's when I realized at some point there was going to be an uphill climb. The trail is 1.3 miles long and should take about an hour. 

My husband walked along at a faster pace being more experienced outdoors than myself and I'll admit it, more physically fit. I was making a point to participate in more outdoor activities, exploring and enjoying nature, while getting exercise. If I am going to exercise I would much rather have beautiful nature to enjoy than some gym wall.

Southern Fried Chicken Livers

Southern Fried Chicken Livers! Love them or hate them? I happen to love them and have since I was a child. I wasn't even tricked into eating them. I knew exactly what they were and have liked them ever since my first crunchy bite. That being said, I'm not a fan of all liver dishes. My mother has fond memories of my grandmother's beef liver and onions recipe. Well, I can tell you that I don't want anything to do with beef liver. I know that sounds contradictory but beef liver is just not my thing. Fried chicken livers and their crunchy goodness, are!

Pineapple Casserole

Pineapple Casserole is one of those dishes that makes it's appearance at holiday meals and other gatherings. It's always a favorite and disappears fast!

If you're like me, I almost forgot about this classic Southern dish. I was reminded of it recently when I ate lunch at a restaurant, one of those "meat and three" kind of places while I was out of town. I couldn't believe I forgot about how great pineapple casserole is.

Table Rock State Park

On my most recent weekend adventure, we made a visit to Table Rock State Park. The park is a beautiful natural area located in the mountain region of South Carolina in Pickens County.

Table Rock is known for the famous mountain face, shown above. There are lots of activities to enjoy within the park that include an old fashioned swimming hole and hiking trails. There are also cabins available for rent within the park and camping areas.

Southern Skillet Fried Okra

OKRY!! Many people do call okra....okry. Regardless of what you call it, okra is a southern favorite. It's an essential ingredient in gumbo and soups. My personal favorites are pickled okra and Fried Okra.

Okra is the edible seed pod from the okra plant. I once asked a question on the Julia's Simply Southern Facebook Page - "What is one food you do not like?" - and was surprised that a lot of people do not like okra. It's one of those, you either love it or hate it kind of things. So this recipe is for all the okra lovers out there!!

This is a very easy method for roasting a delicious and moist chicken. To cut the backbone out of the chicken enables you to flatten the chicken for cooking is referred to as spatchcock. Roasting a chicken flattened out also saves a few minutes of cooking time, so you can have roast chicken any day of the week! I find it handy to keep a few recipes on hand for roasting chicken so you have a few different flavor variations to enjoy. Lemon pepper is always a favorite. Choosing simple sides that can be added to the skillet during cooking will also allow you to create a true one skillet meal.

Chicken & Asparagus Spaghetti Bake

Chicken and Asparagus Spaghetti Bake is wonderful for family meals. Chicken, asparagus, pasta and a creamy rich Alfredo sauce......sounds heavenly to me. Alfredo is one of my personal favorites. It is one of those sauces that is so versatile and can be used with any pasta, with or without a variety of meats and veggie combinations, and is liked by most people. Plus it has cheese in it and I'm always in for anything cheesy!!

Asparagus is highly nutritious. In fact, it is considered to be one of the most nutritionally balanced plant-derived foods. Asparagus has even been used for medicinal purposes. We can thank the pilgrims for bringing this vegetable to America.

This classic fruit dip is a favorite appetizer or dessert. You can make it with as little as two ingredients. I use three, with the addition of some food coloring for a touch of color. I've been making this easy recipe for at least twenty years. Did I really just tell y'all that?? HA!

Nanny's Old Fashioned Blackberries and Biscuits

Y'all I have something special to share with you. This old fashioned blackberries and biscuits is a dish my grandmother (Nanny) would make for breakfast during blackberry season. Back in those days, you couldn't find berries in the store year round like you do now. Honestly, I don't even know if berries were sold in stores back then. You had to go out and pick them yourself. That's why this was a special treat because it only came around once a year. When the blackberries ripened we would be out picking. Oh how I remember those briar bushes scratching my hands and arms.

How about a glass of refreshing fresh squeezed lemonade? It's delicious and a great thirst quencher on warm days. Next to iced tea it's one of my favorite beverages. Making fresh squeezed lemonade is easy and takes only minutes. I always love seeing child entrepreneurs with their pop up stands selling lemonade in summer. Life's lessons can come from something so simple as selling a glass of cold lemonade to thirsty patrons.

Y'all know I love to share easy to follow recipes with you. Sometimes I realize that I've missed sharing something basic, that everyone loves......like comforting mashed potatoes. Mashed potatoes are always a favorite for most people. I'm going to share how I make the perfect creamy mashed potatoes every time. I'm not kidding when people are always asking how I make them because they are so good....and there's a little secret ingredient in there. A friend of mine, Kandy, of nearly 20 years now shared this trick and I've been doing it ever since. Remember, it's a secret, shhhhhh....don't' tell.

Country Style Steak

We are rolling through the month of April Y'all and the weather is beautiful! I've got the windows open and those wonderful spring breezes are flowing through. Life is so good.

Today, it's Country Style Steak for dinner. Country Style Steak is like Country Fried Steak & Gravy cooked in a similar method as you would Smothered Pork Chops. So basically, it's country fried steak and gravy that you cook in the oven on a lower temperature for a couple hours. What you get is.....yummy, delicious, incredible melt in your mouth goodness! The beef just falls apart - in a good tender way. Great served over rice. This is classic southern cooking the whole family will love!
