Breakfast Casserole


This breakfast casserole uses leftovers of my recipe for Hash-Brown Casserole. 
So if by some miracle you do have leftover of the hash-brown casserole, (cause it's so good you might eat it all) this is an easy breakfast recipe. It is so delicious and simple to make up. You just enjoy you coffee and wait for it to bake.

Ingredients:
6 Eggs
3/4 c Heavy Cream
2 c leftover Hash-Brown Casserole
1 c Mild Cheddar Cheese, plus a little more for topping
1/2 tsp Salt
1/4 tsp Black Pepper
2 slices Cooked Bacon, crumbled (or you could use sausage ) optional

Preheat oven to 375 degrees. In a mixing bowl, beat eggs and heavy cream together. Add salt and pepper. Mix in hash-brown casserole, cheese and bacon and mix together. Spray a small casserole dish (such as an 8x8) with cooking spray. Add breakfast casserole mixture and bake for 45 minutes to 1 hour until set and golden brown. I sprinkle a little more cheese at the top at the end of cooking and place back in the oven until melted. Let stand 5 minutes before serving. Yum-Dilly-Icious!
